We had to start our first ever Pick Of The Month blog with the cult classic, El Dorado 15 Year Demerara Rum.
Hailing from the lush banks of the Demerara River in Guyana, this rum is not just a spirit—it’s a story, an experience, and a benchmark in the world of premium rum.
What is Demerara Rum You Ask
Demerara rum refers to rums produced in Guyana, originally using sugar from the region’s rich Demerara River valley. The country’s distillation history stretches back over 300 years, with an unparalleled legacy of wooden stills—some of which are the last of their kind still in operation.
Okay But Like, What is Demerara Sugar?
Oh yeah, a bartender's favorite sugar, demerara. Demerara sugar is a type of minimally refined cane sugar known for its large, golden-brown crystals and subtle molasses flavor (side note demerara sugar is especially specific to tiki style cocktails due to its rich depth of flavor)
El Dorado Rum is crafted by Demerara Distillers Limited (DDL), the sole remaining rum producer in Guyana. They operate historic stills like the Port Mourant (double wooden pot still), the Enmore (wooden Coffey still), and the Versailles (single wooden pot still)—each contributing unique character to the final blend.
What Makes El Dorado 15 So Special?
Aside from the obvious, the 15 year aging process. Unlike many rums that use artificial coloring or added sugar to round out flavors, El Dorado focuses on deep, authentic aging and blending techniques. Trust me, you can taste how special this rum is.
Allow me to walk you through what your first sip will feel like..
On the nose: rich & bold, not like coffee but think more along the lines of a 10 year + aged bourbon. Toffee, vanilla, dates, oak, and smoke graze your nose as you draw your glass closer to your mouth.
First Sip: The first thing you will notice immediately, is the body of the rum itself, this is a full bodied rum with curves for days if you catch my drift. But surprisingly, an easy sipper. With
caramel, apricot, molasses, and tobacco saturating your palate, you can't help but also notice how silky this rum is. There's that demerara sugar coming into play here. Down The Throat: A sip that lasts a lifetime, you will recognize that tobacco grows into an aromatic leather taste. Then, what's that? Chocolate and orange (really giving me flashbacks to fond memories from christmas as a child when you would get those chocolate oranges). Just, exceptional.
Now if you come to Mutiny, and request an El Dorado 15 year Demerara Rum cocktail, we will happily oblige, and make you one of the best cocktails you have ever tasted. However, if you were to ask us how to enjoy it, we would strongly recommend enjoying this neat. Its giving “pour yourself a glass and stare at the fireplace and contemplate whether or not you want to start fresh in a new country with a new name” kind of spirit.

Including multiple gold medals at the International Wine and Spirit Competition and the San Francisco World Spirits Competition. It’s often used as a benchmark in blind tastings, where it consistently stands out for its depth and elegance.
If your more of an “at home” kind of rum connoisseur, here are some suggestions for what we would call a perfect “at home” pairing…
Dark chocolate: (we are setting the vibes here)
A STINKY cheese: Like gouda or manchego (the stinkier the better)
Pancakes: yes you heard that right pancakes, maybe a breakfast for dinner situation, step it up even more, try grilled pineapple pancakes, yes they are as good as they sound Tobacco: but keep it classy guys, whip out that cigar you have been saving for a special occasion
Smoked Meats: The molasses notes really play well with smoked pulled pork or a nice smoked brisket (chefs kiss)
A good cry: I can say with 1000% certainty that this rum pairs well with that, maybe even double up on the pairings and add that cigar to a good cry or the dark chocolate. Immaculate

Outside of its already incredible drinkable experience and the expertise and craft that goes into producing the rum itself. What makes this rum, and many other rums so special, is that it genuinely is a unique and individual experience. Whether or not you are a seasoned rum drinker, or your only experience drinking rum has been mixed into some crazy sugary frozen Las Vegas style drink. Beginners and veterans alike can all appreciate the technicalities of this rum. It is drinkable without seeming unapproachable, yet not overly complex in a way that only an experienced palate would be able to identify the craft in this rum.
